(Note… as pasta cooking times vary… may need to start heating water for pasta before starting the shrimp as they cook up pretty quickly)
In a large pan, heat olive oil to a medium. Add in shrimp, garlic… season with pepper mix (tsp of crushed red pepper, 1/4 tsp of black pepper and optionally 1/4 tsp of white pepper)…again, this is a “season to taste” recipe! Some folks like it spicier, so season to taste. If adding broccoli or red peppers, add them into the mix and add 1-2 tablespoons of olive oil. Reduce heat to medium low and let simmer for a 6-7 minutes. Add in sliced tomatoes… cooking them for only a couple minutes. Turn off heat and top with chopped scallions and parmesan cheese… It’s now ready to be a “topper” to your favorite pasta. We love it over fettuccini, penne or sometimes with cheese ravioli!
