Vineyard Notes
2021 was a beautiful vintage. The winter was quite dry with far lower than average rainfalls with a few spring rains that helped us out. The growing season was warm and even without any adverse weather events. We picked slightly earlier than average but because of the very small crop this vintage, flavors are intense and concentrated.
Production Notes
100% Syrah
Winemaker Notes
We picked our Syrah for sparkling in mid-August to retain bright acidity in the final wine. The grapes were hand harvested and then crushed and left to sit on the skins for about 5.5 hours. We then pressed off skins to a stainless steel tank for settling and then racked off to another tank for fermentation. The fermentation took exactly 30 days and was kept at a temperature of 55 degrees to allow all the aromatics to develop. After fermentation, the wine was settled and allowed to rest for a few months before being bottled with some yeast and a small amount of sugar. The wine went through secondary fermentation in bottle for 15 months before being disgorged. We chose not to add any dosage to this wine to allow the bright and fruity characters shine.

Other Notes
This fruit comes from the oldest block planted on our property, our Syrah. Planted by Mike and Vicky when they first bought the property in the year 2000, this block has a North-South row facing and is cordon pruned.
